Vegetables are simply delicious when roasted & this vegan pesto pizza with roasted vegetables is going to be the perfect dish for us to serve to friends this bank holiday weekend.
The crispy crusts and soft texture of the roasted veg make a perfect match.
You can pretty much use whatever vegetables you have lying around. Chop all the veg into small pieces so they will roast quickly. Finely chop a clove of garlic and mix into the chopped veg with olive oil. Place in roasting tray and roast for around 15 mins at 180.
Spread your pizza base with vegan pesto (we bought ours in Tesco) and top with the roast veg. Turn the oven up to itβs highest temperature and when itβs hot enough cook your pizza for 3-5 minutes.
For our pizza we used butternut squash, yellow pepper, courgette, red onion, tomatoes and black olives. But like we said, any combination of vegetables will make this pizza a winner.
