Tomato, Mozzarella & Basil Pesto Pizza

Ever since we found out Award Winning Food Blogger, Shilpa Razniewska of Soulful and Healthy was a fan of our bases, we knew we had to get her to share a pizza recipe with us! It is inspired by her very own trip to Italy’s idyllic Lake Como and the flavours on this pizza are just summer on a plate. This pizza is the perfect treat on weekends and kids will love it too!

When I first moved to Ireland in 2012 my husband and I were exploring different kinds of cuisines and different ways of cooking as well. It was that time we discovered Piero’s pizza bases and when we first tried it at home, I was quite impressed by its quality, it was nothing like a ready-made base bought from the store. The texture is same as you would make at home. So, since 2012 I can’t even count the number of times, we have made different varieties of pizza using Piero’s pizza base and it has never disappointed us at all. The quality and taste are the same even now as it was when we used it for the first time.

Although I have learnt to make my own pizza base at home, at times when I don’t feel like making it but still crave for a pizza we always go for this base. I love that it is thin crust and stone baked. It’s light and delicious! We hardly order take away these days after we found out this amazing base.

This pizza is inspired by one of our trips to Italy in the beginning of 2012, when I went to meet my husband, back then my boyfriend. We visited the town of Lake Como and it was absolutely beautiful, I am so glad we went back there again in summer years after with our little boy. We had dinner at a restaurant in Lake Como and there we ordered pizza which was topped rocket leaves.

This recipe I am sharing is inspired by the pizza we ate there. After that we made these many times at home and each time using Piero’s pizza base and it reminded us of our trip to Italy.

The perfect stone baked and thin crust is ideal for a quick, delicious and tasty pizza anytime. Topped with beef tomatoes, mozzarella balls, pesto and fresh rocket leaves it is the perfect combination of all things delicious.

I am sharing my version of this pizza you can make it however you like it too. With any toppings of your choice. For the sauce I prefer using simple passata, you can use pizza sauce as well. Piero's stone baked pizza bases are great for any kind of topping, or even a simple Pizza Margarita!

Ingredients -

  • 2 Piero's Stonebaked pizza bases

  • 1 cup Pizza sauce or passata

  • 1 thinly chopped beef tomato

  • 1 Mozzarella ball sliced

  • 2 tsp pesto

  • 1 cup grated mozzarella

  • Freshly ground pepper to season

  • 1/2 tsp dried Italian mixed herbs

  • Handful of fresh rocket leaves to serve

Method -

  1. Pre-heat the oven to 250 degree Celsius

  2. Spread the pizza sauce on each pizza, sprinkle mozzarella, arrange the tomatoes and mozzarella slices

  3. Add the pesto on the sliced mozzarella. Season with dried herbs and fresh ground pepper

  4. Bake in the pre-heated oven for 5 to 7 minutes

  5. When serving garnish with fresh rocket leave. Bon Appetit!

Spiced Lamb, Beetroot Relish & Feta Cheese Pizza

We got into a great discussion on pizza toppings a while back on Twitter. Some really tasty recipes were shared and one that I’ve been meaning to post up for a while now is this gorgeous Middle Eastern style pizza. The recipe was shared with us by Irish food fanatic Dee @gingerbreadmiss. Thanks Dee! Dee suggests we use sheeps cheese but if you can’t find any that a good quality Feta will work too. I used Feta, and yes, it works!

I thought the Bank Holiday Weekend would be a perfect time to give it a try and I wasn’t wrong. Myself and Piero had friends over last night and it went down so well! Of course, Piero served up his traditional Pizza Margherita. But for me, I enjoy nothing more than experimenting with toppings and flavours to see what I can create!

The flavours in the Spiced Lamb teamed with the sweetness of the Beetroot is perfect. A few shredded fresh Mint leaves to garnish and this pizza will be perfect for any Bank Holiday party you plan on having. I made the Spiced Lamb Mince the night before, so when it came to preparing the pizza I have all the ingredients ready to put on. You can make this pizza in 10 minutes

Ingredients -

Spiced Lamb

1 pack of Lamb Mince (usually 400 or 500g)

1 clove of Garlic

Half teaspoon of ground Cumin

Half teaspoon of ground Coriander

Half teaspoon of AllSpice

Tablespoon of Tomato Puree

100mls of Chicken Stock

For the rest of the Pizza

2 Pizza da Piero pizza bases (found in these stores around Ireland)

Block of Feta Cheese

Handful of Pine nuts

A sprig of fresh Mint

Method -

1 - Turn your oven up to the highest temperature

2 - Chop the clove of garlic.

3 - Fry up the lamb mince with garlic, cumin, coriander, allspice, and tomato purée.

4 - Add in the chicken stock and simmer until reduced.

5 - Spread the base of your pizza bases with the beetroot blush.

6 - Top with minced lamb

7 - Crumble over the feta cheese

8 -Sprinkle with pine nuts

9 - Cook in oven for 3 - 5 minutes depending on the oven. The edges of the pizza should be crisp but not burnt.

10 - Remove and top with fresh mint

Black Pudding, Goats Cheese & Onion Marmalade Pizza

Pizza bianco is a pizza made with no tomato sauce base. While sometimes it can be defined by what it lacks, it is the toppings on these pizzas that can really take centre stage…

I’ve used an Onion Marmalade as the base for this pizza. Teamed with some crumbled Black Pudding, Goats Cheese and a drizzle of Honey this pizza is busting with some of the finest flavours Irish food has to offer!

It’s quick and easy to make too. Perfect for those evenings when you really fancy something delicious but don’t have time. You could even pre cook the black pudding the day before and leave it in the fridge until you’re ready.

Ingredients -

Pizza da Piero pizza bases

Onion Marmalade

Black Pudding

Soft Goats Cheese

Honey to drizzle

Instructions -

1 - Pre heat your oven to the highest temperature.

2 - Slice and pre cook your black pudding. Don’t over cook it because it will be cooked some more in the oven on the pizza.

2 - Spread the onion marmalade on your pizza base.

4 - Scatter on the cooked black pudding.

5 - Crumble on the goats cheese.

6 - Bake the pizza in the oven for 3-5 minutes

7 - Drizzle with honey, slice and serve.

Easy pepperoni pizza

An Italian-American favourite. This no frills pizza makes an easy weeknight dinner.

Ingredients -

Pizza da Piero pizza bases

Pizza sauce

Fresh Mozzarella

Pepperoni

Instructions -

1 -Heat your oven to the highest setting

2-Spread your pizza base with pizza sauce

3-Sprinkle with mozzarella

4-Top with pepperoni

5-Bake in the oven for 3-5 minutes. Until edges of crust are browned lightly and cheese melts.

6-Slice and enjoy!

Healthy & thrifty, this simple pizza will please everyone

Ingredients -

Pizza da Piero Pizza Bases

Baby Potatoes, sliced thinly

Olive Oil

2 Sprigs of Fresh Rosemary

Port Salut Cheese

1 - Heat oven to highest temp

2 - Boil a pot of water and simmer the potatoes for 5 minutes.

3 - Cover the potatoes with the oil and rosemary and bake in oven for around 15 minutes until they start to get crispy

4 - Cover the pizza bases with diced up Port Salut

5 - Top with potato

6 - Bake for 3 - 5 minutes

Nutella & Banana Dessert Pizza

Ever had pizza for dessert? If not, you’re in for a treat. Literally.

Ingredients - Pizza da Piero pizza bases, bananas, nutella, salted caramel spread, walnuts & cadbury flake.

Heat your oven to the highest temperature.

Spread on the salted caramel then the nutella.

Slice the banana and place on top.

Sprinkle with crushed walnuts (or any type of nut you have in the press)

Cook for 3 - 5 minutes.

Sprinkle with flake to serve.

Neven Maguire's Pumpkin Pizza with Cashel Blue & Pickled Red Onion.

Pickled Red Onion

4 tbsp caster sugar

4 tbsp red wine vinegar

1 red onion, very thinly sliced

sea salt & freshly ground black pepper

Pizza Toppings

Pumpkin, peeled, seeded & diced

Cashed Blue Cheese

Fresh Rocket

  • All topped on Pizza da Piero Pizza Bases


Heat your oven to the highest temp.

Heat the oil in a heavy-based frying pan over a medium - high heat. Sauce the pumpkin for 8-10 minutes, until it is cooked through but still holding its shape.

Meanwhile, make the pickled red onions. Put the sugar and vinegar in a small pan and bring to a simmer until the sugar has dissolved. Remove from the heat and add the red onion slices. Season to taste and set aside to allow the flavours to combine.

Put the pizza bases on 2 large baking sheets and arrange the sautéed pumpkin and Cashel Blue on top. Bake for about 3- 5 minutes, until the base is crisp and the blue cheese has melted. Remove the pizza from the oven and add mounds of the sweet pickled red onion, draining it of any excess liquid. Scatter over the rocket, drizzle with a little olive oil and transfer to warmed platters to serve straight to the table.

Tuna is an excellent source of omega-3 fatty acids, protein, magnesium potassium, vitamin B-12, and niacin. So not only is this pizza delicious but it’s also a healthy choice. Win, Win!!!
